This simple and easy-to-make flatbread is well-loved by children and adults alike. Eat it plain; with a little butter or savory topping; fold it in half and use as a pita, or use as a pizza base. However you decide to use this, you’ll be sure to make it again and again.

  • 10 oz mashed potato (about 2 medium potatoes)
  • 1 1/4 cup spelt flour
  • 1 egg
  • water, if needed

Preheat the oven to 400°F,

Put all ingredients into a bowl and stir until the mixture forms a smooth dough. Pick up the dough and roll it into a ball with your hands. Divide the ball into four even portions. Press each portion flat onto a lightly floured counter and roll or press out into a flat circle.

Place each of the four circles onto a parchment-lined baking tray and prick each one several times with a fork. Bake in the oven for 15-20 minutes, until lightly browned.

Remove from the oven and allow to cool for a few minutes. Serve warm or at room temperature.
