- 1.5 cups of cooked spelt grains
- 1/2 cup tahini (sesame seed paste)
- juice and zest of one organic lemon
- 1 teaspoon ground cumin
- 1 tablespoon olive oil
- pinch of salt, to taste
Cook the spelt grains according to package instructions and allow them to cool to room temperature. Measure all ingredients into a food processor and process until the mixture forms a smooth paste. If it is too thick, add additional water or olive oil to reach the desired texture. Add additional salt if needed.
