Berry and Cream Cheese Tart

(Makes approx. 16 pieces)
FOR THE CRUST:
250ml buttermilk
100ml natural brown sugar
2 eggs
450ml spelt cake flour
2 teaspoons bicarbonate of soda
0.5 teaspoon cinnamon
100g butter, melted
FOR THE FILLING:
300g natural cream cheese
100ml cream or milk
50ml natural brown sugar
2 teaspoons vanilla sugar
2 eggs
2 tablespoons spelt roasted fine flour
400ml bilberries, raspberries, strawberries,
lingonberries, or other berries

Preheat the oven to 185°C.
Mix the ingredients of the crust carefully together.
Be careful not to stir too much to avoid making the texture chewy rather
than crispy.
Spread the dough on a baking sheet of approx. 38 cm x 25 cm in size, lined with baking parchment.
Cook in the oven for approx. 10 minutes until the surface is slightly cooked.
Combine the cream cheese, cream or milk and sugars and stir them until smooth.
Add the eggs and flour in turns, stirring briskly.

Take the tart crust from the oven and pour the filling evenly on top. Sprinkle the berries on the filling and cook on the middle level of the oven for approx. 30 minutes or until the tart is done.

Serve warm as is or with vanilla ice cream or whipped cream
seasoned with vanilla. This recipe makes a generous amount of
delicious berry tart!
